Peanut Butter Blossoms
Unwrap 48 Hershey Kisses and put in refrigerator.
In a large bowl combine:
1 3/4 cups flour
1/2 teaspoon salt
1/2 cup shortening
1 teaspoon vanilla
1 teaspoon baking soda
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup peanut butter
Mix well after each addition until a ball of dough is formed.
Shape dough into balls using a rounded teaspoonful for each, I use a small melon-baller.
Roll cookies in granulated sugar.
Bake on ungreased cookie sheet at 375 degrees for 10-12 minutes.
Remove from oven and immediately top each cookie with a chocolate kiss pressing firmly - enough to crack cookie edge.
*To make gluten-free, substitute flour with a gluten-free mix.
